Single vineyard chardonnay made from 100% Gin Gin clone, grown at Grace Farm. Hand-picked at optimum ripeness and gently whole bunch pressed into French oak barriques where indigenous yeasts completed the fermentation to dryness. A high percentage of grape solids in the pressed juice, wild yeasts and 45% new French oak combine to produce a complex wine with exceptional fruit weight, sublime texture and saline acidity.
