Tasting Notes

The wine exhibits ripe blackcurrant fruit with earthy graphite mineral overtones, cradled by exceptionally fine tannins and integrated French oak. A distinct mineral complexity is derived from the rocky granitic soils of the Leeuwin Ridge.

Season

2025 was a welcome relief form the hectic pace of the previously hot and dry vintage, with the growing season offering perfect conditions for all varietals on the estate. Good winter and spring rainfall was followed by a warm, disease free, and slower ripening period. The result of this was all varietals being harvested very close to the average harvest dates for all varietals on the property, and all in pristine condition.

Vinification

The Semillon grapes were hand harvested in the cool of morning on February 26, 2025. The whole bunches were put into a refrigerated sea container for a period of 72 hours at -16 degrees Celsius, until the grapes were fully frozen. The grapes were then pressed and exceptionally sweet juice was extracted as the grapes defrosted during the press cycle. Pressing was complete when the sweetness of the juice was considered ideal, with an extraction of only 330L/tonne. The sweet juice was inoculated with a selected yeast and fermented until a balance was reached between the alcohol and sugar levels in the wine. The wine was then stored in seasoned French oak puncheons for 5 months before stabilizing, filtering and bottling in July 2022.
