Tasting Notes

The quality of the estate Semillon block is on full display here, with only free run juice utilised to ensure the precision and delicacy of this wine. Bright aromas of preserved lemon, fresh spring herbs  flow onto a lively palate with great fruit weight and saline acidity that drives the wine to a long and crisp finish. Barrel fermentation supports the fruit and enhances texture and palate weight. This wine is ready to drink now, but it will also reward cellaring for up to 15 years. The wine will develop more roundness and honey toasty characters as it ages.

Season

2025 was a welcome relief from the hectic pace of the previously hot and dry vintage, with the growing season offering perfect conditions for all varietals on the estate. Good winter and spring rainfall was followed by a warm, disease-free, and slower ripening period. The result of this was all varietals being harvested very close to the average harvest dates for all varietals on the property, and all in pristine condition.

Vinification

Hand-harvested in the cool of the early morning on 25 February 2025, the fruit was destemmed, crushed, and gently pressed. Only free-run juice was retained. After flotation clarification, the juice was transferred to seasoned French oak barriques and puncheons for fermentation. Following fermentation, the wine remained in barrel for five months prior to blending, stabilisation, filtration, and bottling in July 2025.
