Tasting Notes

The 2019 Reserve Cabernet Sauvignon is made from the oldest planting of cabernet sauvignon on the property. The wine exhibits ripe blackcurrant fruit with earthy graphite mineral overtones, cradled by exceptionally fine tannins and integrated oak. The fragrant bouquet is lifted with cassis and violet aromas which lead into a silky palate interwoven with dusty tannins.

Season

Vintage 2019 was three weeks later than average, with cool weather from budburst to flowering which continued over the ripening season. Harvest rain, high humidity and intense native bird pressure led to intensive vine canopy management throughout the region. In this unique season we decided to select only the best parcels within blocks to attain the wines that we strive for. By sacrificing quantity for quality, we believe the 2019 wines will rank amongst our very best.

Vinification

The cabernet sauvignon and malbec were harvested at optimum ripeness on 16 March and immediately crushed to a static fermenter and inoculated. The ferment was pumped over for a period of 10 days to extract maximum colour, tannin and flavourfrom the skins, until the ferment was dry.
The wine underwent malolactic fermentation during primary
fermentation and was pressed to a combination of 40% new and 60% second use French oak. The wine was matured in this oak for a period of 14 months. No fining was required prior to bottling.
